The main difference between the two are their acidity levels. One that has an acidity level between 0.8 and 2.0, is graded as virgin, and those with acidity levels less than or equal to 0.8, are graded as extra virgin. Unlike the refined olive oil, the virgin and extra virgin olive oil go through the "cold-pressed" method of extraction, where no heat or chemicals are involved.
While this method of manufacturing takes a substantial amount of time, and costs a little more expensive, it is superior in quality, taste, and nutritional value. Having undergone the least amount of processing, the extra virgin olive oil is able to retain its natural antioxidants and vitamins!
